Indonesia Sumatra Classic is prepared using the wet shelling method - a unique method used only in Indonesia. This method is also known as dry seeding or Gilling-Basah. During harvest, fresh coffee cherries are carefully selected. Once ripe, it is ground in a classic flour mill before being dry fermented, placed on parchment, and left to dry on the patio for 4-5 days, or until 25-40% moisture is reached. At this point, it will be dehulled by the wetting machine. The peeled coffee is then dried again to 10-12% moisture and storage for about a month before dry milling. This process gives the beans a rich flavor and aroma typical of the growing region, with a sweetness and acidity that you won't find in lower-quality beans. The rich flavor of coffee processed by the "well-hulled" method is not for the masses, providing a unique experience for those who love experience novel coffees.
